Lisa's favoriet Chicken Salad

Francene's Chicken Salad


1whole chicken or 4-5 chicken breasts (baked and shredded) 1 small can crushed pineapple, well drained (reserve juice)

2-3 med apples, cut into bite-size pieces

2-3 stalks of celery, chopped into small pieces

1 bunch green onions, chopped

1/2 cup chopped pecans

1/2 cup sour cream

1/2 cup mayo

2 TBLS lemon juice Salt and Pepper to taste


Put cut up apples in reserved pineapple juice and lemon juice while preparing the rest of the ingredients. Mix all together and chill. Serve on rolls or croissants.

Ali's Chex Mix

Coconut chex mix


1 (17.5 oz) box of rice chex cereal

1 (7 oz.) bag of coconut


Mix together in a large bowl.


In a saucepan combine:

1 cube real butter

1 1⁄2 c sugar

1 1⁄2 c white karo syrup


Boil for 3 minutes, then add:

2 teaspoons coconut flavoring


Pour over cereal mixture and stir well.

Pour out onto wax paper to cool and enjoy!!

Verda's Fudge Brownies

Fudge Brownies


2 cups Sugar

1/2 cup Shortening

4 eggs, beaten

4 squares of unsweetened chocolate melted, or 4 rounded Tbs of cocoa mixed with 1 Tbs butter and a dab of hot water. Mix to consistency of melted chocolate.

1-1/3 Cup cake flour

1/4 tsp Salt

1/4 cup evaporated milk -- dilute with 1/4 cup water

2 tsp Vanilla

1-1/2 Cup chopped nuts

Cream sugar & shortening. Add well-beaten eggs & melted chocolate.

Sift flour with salt.

Add flour mixture alternately with the diluted milk.

Add vanilla & nuts with the last few stirs.

Spread mixture in a greased 9x13 pan.

Bake at 350 degrees for 20 to 30 minutes.

Cut into squares while still warm.

Uncle Turbo's Guacamole


3-4 Ripe Avocados Sliced and Mashed

1 Package Spicy Guacamole Mix

1 Gala/Fuji Apple cut in pieces

6-8 Strawberries cut in pieces


Place all ingredients in a bowl. Stir til Guacamole mix is blended in. Serve with tortilla chips. I could eat this on almost everything. It's really good served over grilled chicken too.

Marsha's Granola

(This makes 5 one-gallon Ziploc bags)

(I purchase most of the ingredients at Smith's)

10-14 cups rolled oats (purchased at the Lindon Cannery)
1 - 32 oz. bag raw wheat germ
1 - 20 oz. bag wheat bran
1 - 10 bag TVP (soy granules)
1/2 - 1 cup ground flax seed (sometimes at Costco)
1 - 12 oz. bag shredded unsweetened or sweetened coconut
1 - box All Bran Cereal
3 TBLS cinnamon
3 tsps salt

MIX ALL INGREDIENTS IN A VERY LARGE POT OR CONTAINER.

BRING TO A ROLLING BOIL THE FOLLOWING IN ANOTHER POT:
4 cups vegetable oil (Canola)
4 cups honey
1/4 cup or more of vanilla

POUR OIL/HONEY MIXTURE OVER PREMIXED DRY INGREDIENTS. STIR UNTIL ALL THE DRY INGREDIENTS ARE WET WITH THE OIL/'HONEY MIXTURE. THIS CAN TAKE A WHILE! PLACE SEVERAL CUPS OF GRANOLA MIXTURE ON LARGE FLAT PANS. SPREAD TO ABOUT 3/4 INCHES THICK. BAKE IN 350 DEGREE OVEN. DEPENDING ON YOUR OVEN (5-8 MINUTES) TURN OVER GRANOLA WITH A LARGE SPOON WHEN LIGHTLY BROWNED ON TOP. CONTINUE TO BROWN WHAT YOU HAVE TURNED OVER IN THE PAN (ANOTHER 5-8 MINUTES). REMOVE FROM THE OVEN WHEN ALL IS LIGHTLY BROWNED. COOL AND PLACEIN AIRTIGHT CONTAINER. ADD NUTS AND DRIED FRUITS TO TASTE.

Jennifer's Honey Salsa Chicken

Honey Salsa Chicken

1 Tbsp butter

1 onion diced

2 tsp chili powder ( I use less to make it less spicy for kids)

2 Tbsp yellow mustard

1/2 tsp seasoning salt

1/4 c salsa

1/2 c honey

1 Tbsp soy sauce

1 dash tabasco sauce

Put all of this in a pan and simmer on the stove. Place chicken breasts in 9x13 pan. Pour sauce over the chicken and bake at 425 until done. Serve over rice. (I always double the sauce so there is extra to pour over the rice). Very yummy!:

Kathy's Dinner Rolls

Dinner Rolls

2 cups lukewarm water

1 1/2 teaspoons salt

2 Tablespoons yeast

1 cup margarine

1 cup sugar

6 beaten eggs

8 or 9 cups flour


Mix yeast with 2 Tbs. sugar and 2 cups water.


Add melted margarine (make sure it is just warm not hot), sugar and eggs.


Mix well.


Sift flour and salt. Add to other ingredients.


Mix well and let rise 2 hours. Punch dough into four equal parts. Roll each in a large circle.


Brush with melted margarine. Cut like a pizza into 12 pieces. Roll each, starting with the wide end. (crescent roll style.) Place on a greased cookie sheet putting tails down on pan. Brush with melted butter.


Let rise for 3-4 hours.


Bake at 400 degrees for 10 - 12 minutes.


Makes 48 rolls.
