Brenda's No-Crumble Corn Bread

NO-CRUMBLE CORN BREAD

1/2 cup butter

2/3 cup sugar

2 eggs

1 cup buttermilk

1/2 tsp. soda

1 cup yellow cornmeal

1 cup all-purpose flour

1/2 tsp. salt

Melt butter: add sugar and stir well. Add eggs and stir until well blended. Combine buttermilk and soda, then stir into sugar-egg mixture. Add cornmeal, flour, salt and stir until just blended. Pour into a greased 8 inch square pan. Bake at 375 for about 30 minutes. (For glass pan, reduce heat to 350)

Double the recipe for a 9/13 and it works great also.
